Wow Tuesday again already eh??? In the spirit of this beautiful weather we have been having, I wanted to share a great recipe that is totally delicious and kind to the waistline!! This is a great recipe for when you have friends over, especially of the vegetarian and vegan variety!! Its quick, easy and fresh–which is sometimes missing when you go to parties–chips and deep fried items tend to take over!
Edamame and Corn Salad
- Corn niblets (canned or frozen)
- Edamame (with no shell)
- Avocado (chopped)
- Cherry tomatoes (halved)
- Lime (2-3 depending on how much juice they have)
- Dash of garlic powder
- Dash of salt
Mix everything up in a bowl, squeeze limes for juice over the ingredients and add in any other additional spices you would like!
The best part was right after I began this post I went over to a friends place for an impromptu BBQ and what did she serve…edamame and corn salad–well she clearly learned from the best! (in reality she constantly reminds me how to make this amazing salad!!)
