Eating healthy on a budget…
It is possible, it is just not ideal! For all of those students out there, I am sure you all completely understand April eating habits. It is that time of year….(in the Northern Hemisphere–for all of my Aussie readers), when money from your summer job is long gone, Christmas money was spent on necessities like booze and clothes, and all other financial resources you have are rapidly depleting!
So, I am in this boat currently, as I am in my last few weeks of college. So here is what I have stock piled in my house right now:
- Frozen veggies
- Soy chicken (running out)
- Shrimp (also, quickly running out)
- Buttery Popcorn (attempt to not eat this as a meal)
Overall, not to bad. I am sure I have some canned beans and tomato sauce tucked away in my cupboards too! What I am feeling right now is that I am on a pasta overload, after cutting pasta and breads out of my diet during my fitness challenge in January and February, I feel as if this is all I am eating now!
Wondering how you eat healthy with these foods? It is all about balance! Skip the KD and cook yourself a single serving of pasta (1 cup..I promise this is enough for one!), steam up lots of veggies on the side with soy sauce and pepper (rather than butter) or add them to your pasta/rice! Finally, make sure to get your protein in, I may be more crazy about protein as a vegetarian, but its important for everyone. So if you’re not a veg make sure you are having lean and un-breaded meats. I love soy chicken (by PC Blue Menu) as an option, it’s not breaded and all I do is pan fry it with a bit of BBQ sauce and there you have it!
Mainly, keep a balanced diet, it sounds like a grade school class, but its true you might have to go from fresh to frozen but as long as you are not over eating one element and ditching another you can stay on track with your fitness goals. Also remember to mix things up, whether that be by mixing up proteins or by trying out new spices and sauces, if you change it up you will be less likely to say screw it I am going to eat a box of KD instead (even I will admit, I have done this more than once before!).
