I had a big weekend of eating so I decided to keep lunches light this week. This post is vegan by default as I think most of us enjoy a salad or two sans meat/cheese/creamy dressing. Either way I love this salad and I am loving Organic Girl Greens! I typically buy the baby kale or mixed greens, but my local store has only had the mâche rosettes….which are now my new favourite lettuce!
Cranberry Poppy Seed Greens
- 1-2 Cups Organic Girl mâche rosettes (Love these, however any greens will do!)
- 1/4 Cup halved grape tomato
- 1 mini cucumber chopped
- 1/4 cup raw shelled pumpkin seeds
- 1/4 cup dried cranberries
- 1-2 tbsp Renée’s poppy seed dressing
Throw this all together and you have one yummy salad! Want an extra punch of protein add black beans or quinoa and enjoy. I am typically a olive oil and balsamic kind of salad eater, but this is a great option for a creamy dressing that is vegan! Be sure to read the label, as not all poppy seed dressings are dairy free.
