This salad is an oldie, but a goodie! There are a few ways to do this salad, either as a side for a meal or throw it in to some Scoops Tostito chips and serve as an appetizer! I enjoy this dish year round, but this is a great way to get into a Spring mood with a fresh and delicious bean salad!
Chili-Lime Black Bean Salad
- 1 can black beans
- 2 cups frozen corn
- 2 cups frozen edamame
- 1 container cherry or grape tomatoes
- 1 avocado (optional – I didn’t have one on hand and I find it doesn’t last over night, but tastes great in this salad!!)
- 1 lime (juiced)
- 1 Tbsp chili powder
- 1 tsp garlic powder
- salt and pepper to taste
Boil corn and edamame according to package instructions and let cool. Drain and rinse black beans and chop tomatoes. In a large bowl mix beans and veggies together. Squeeze the juice of 1 lime into bowl, add chili and garlic powder. Add salt and pepper if desired. Stir and serve. If you have the time, let this dish sit so the lime juice and spices can absorb (this one is even great on day two!) If you plan on adding avocado, once plated add it on top as a garnish.
Having a cocktail party? Spoon into a scoops corn chip, place on a plate to make it look pretty and serve!
